We enjoyed tasting some delicious food and speaking with the Manager, Pheakdey's Uncle.
We tried noodles, fish balls, omelets, fried rice, coconut dip and sweet fried bananas.
All dishes were very yummy.
The Manager told us they have owned the restaurant for under a year.
He had other businesses in Phnom Penh that are very different. For example he also runs a car dealership selling Highlanders.
The restaurant is open at 6.00 in the morning and closes at 8.00 in the evening.
They have busy times during the day and quieter times when the staff prepare food to get ready for the rush. Lunches are usually quite busy.
They are open 7 days a week and staff work 5 or 6 days. They have a schedule for the eleven staff so each staff member gets time off work. The staff have set roles in the kitchen or serving but are flexible and jump in if other areas are busy. They buy their ingredients from the market each day and keep their costs low so they can make a profit.
They have mixed customers. They do have regular Khmer customers who come for their popular noodle soup dishes. They also have a range of other customers that drop in.
